Staying safe at home during the Covid-19 Pandemic has left many of us looking for fun or productive things to do. So, we thought we should share with you this AAAA-mazing cookie recipe! Our neighbors at Eli's Coffee Shop gave us the scoop on these delicious Sea Salt Pistachio Chocolate Chip Cookies. Seriously, they are so yummy, when they brought some over for us they were GONE within minutes
So, whether you are an expert baker, or just bored, this is a must try recipe. You're whole household will thank you!

Here is the recipe!
Makes: 2 dozen cookies
Ingredients 1 1⁄2 c Flour
1⁄2 tsp Fine sea salt
3⁄4 tsp Baking powder
1⁄2 tsp Baking soda
1⁄2 c Unsalted butter, room temp
1⁄4 c Granulated sugar
3⁄4 c Brown sugar
1 Large egg
1 tsp Vanilla extract
3⁄4 c Chopped, shelled pistachios
1⁄2 c Dark chocolate chunks
1⁄2 c Mini chocolate chips Coarse sea salt for sprinkling
Preheat oven to 350F. Line a large baking sheet with a silicon baking mat or parchment paper and set aside.
In a large bowl, whisk together flour, salt, baking powder, and baking soda. Set aside.
Using a mixer, cream butter and sugars together until light and fluffy, about 3 minutes. Add the egg and vanilla and beat for an additional 2 minutes, scraping down the sides well. With the mixer on low, slowly add in the dry ingredients. Mix until just incorporated. Stir in the pistachios and chocolate chunks.
Using a spoon or cookie scoop, form tablespoon size balls of cookie dough. Place balls on prepared baking sheet, about 2 inches apart. Sprinkle cookie dough balls with sea salt. Bake cookies for 12 minutes, or until lightly browned around the edges.
Let cookies sit on baking sheet for 2 minutes. Transfer cookies to a wire cooling rack and cool completely. Store in an air-tight container for up to 4 days or freeze for longer storage.
